Today I pulled beets from the garden, and for the first time I have about a hundred left over after cooking with them all summer. I’m not sure how I should prepare them for the winter. I’ve read about storing them in a box with sand, freezing cooked beets, or canning, I don’t want to pickle them.
So my question to you is how do you prefer to keep your beets? I’ll probably be making mostly soups with them.
