Summer time is so busy here on the farm and we went camping last week for the first time with all three kiddos! So I haven’t posted much lately!
This week we have long time friends staying at the farm with us! Last night I made lasagna and it was the perfect amount to feed all eight of us! It was delicious plus I got to add celery and zucchini and herbs fresh from the garden!
First I made the sauce:
Brown 1 pound of ground beef
Add 2 chopped onions
4-5 cloves chopped garlic
3 stalks chopped celery
1 chopped bell pepper
5 sliced crimini mushrooms
2 chopped zucchini
3 sprigs thyme
2 sprigs Rosemary
2 sprigs oregano
1 diced hot pepper
1 1/2 cans pasta sauce
Let simmer for a while
Then I made the pasta dough:
In a food processor mix together 2 eggs and 1 3/4 cup flour
On lightly floured surface knead together then set aside in covered container to rest for about 20 minutes
Roll out dough to a thin setting on your pasta roller
Grate a bunch of cheese
Start assembling your lasagna
First layer is sauce then cheese then noodles and repeat
Bake for 45 minutes at 400
